Coyote Caviar

Ingredients:
-1 16oz. can black beans
-1 11oz. can white shoepeg corn
-2/3 cups chopped green onions
-2/3 cups cilantro
-2 chopped avocados
-1 cup chopped tomatoes
-Dressing:
**1/4 cups olive oil
**1/4 cups red wine vinegar
**2 garlic cloves, chopped
**Salt and pepper
**1 tsp. cumin
 
Directions:
Mix dressing items and pour over beans, corn, and onions. Add cilantro, tomatoes, and avocado right before serving.
